look, sometimes you just need a big ol’ pile of loaded fries to make everything right in the world. and if you’re gonna do loaded fries, why not go all out with gyro loaded fries? we’re talking crispy, golden fries topped with juicy, spiced lamb, creamy dill yogurt sauce whipped into a tzatziki, tangy hummus, fresh cherry tomatoes, briny olives (not for me, personally, but you know, if it’s your thing, than treat yourself), and all the good stuff. it’s messy in all the best ways and hits every craving you could possibly have all at once—salty, spicy, creamy, crunchy, plus its way easier to make than it looks (especially if you buy the fries frozen instead of make them from scratch. maybe one day i’ll make fries from scratch, but not today), and it’s way too good not to share (though i wouldn’t blame you if you didn’t). this is one of those recipes that’s gonna make you feel like an absolute kitchen badass without breaking a sweat. so, go on, get messy, pile high, and don’t skimp on the toppings.

ingredients:
48oz frozen fries
olive oil
salt & pepper
2ibs ground lamb
2 red onions, finely chopped
9 cloves of garlic, minced
1 serrano, minced
1tsp za’atar
1tsp garlic powder
1tsp onion powder
1tsp smoked paprika
1tsp msg
1tsp oregano
1tsp cumin
1tsp coriander
1tsp marjoram
1tsp rosemary
1/4tsp nutmeg
2 cups full fat greek yogurt
2tbsp dill, minced
1 lemon, zested & juiced
1 cup cherry tomatoes, halved
1/2 cup feta, crumbled
1/2 cup kalamata olives
1 cucumber, thinly sliced
2 cucumbers, grated
hummus (no such thing as too much)
instructions:
prep the fries:
follow the instructions on the bag of frozen fries, but give them some love with a drizzle of olive oil, and sprinkle on garlic powder, onion powder, smoked paprika, za’atar, msg, salt, and pepper. toss and coat, then bake until golden and crispy.
make the tzatziki
mix greek yogurt, dill, cucumber, lemon juice, lemon zest, and 5 cloves of garlic in a bowl. season with salt and pepper to taste. stash it in the fridge to let the flavors meld and set until it’s time to serve. FULL RECIPE FOR TZATZIKI RECIPE FOUND HERE)
cook the lamb:
in a large mixing bowl, combine ground lamb, chopped onions, Serrano, 5 minced garlic cloves, oregano, cumin, coriander, marjoram, rosemary, nutmeg, salt, and pepper
heat a pan over medium heat and add a little olive oil. cook lamb mixture until browned and cooked through, breaking it up as it cooks
assemble the loaded fries:
once the fries are done, pile them onto a platter, top with spiced lamb mixture
drizzle generous amounts of tzatziki, and add dollops of hummus
garnish with cheery tomatoes, crumbled feta, kalamata olives, and/or sliced cucumber
