succotash (green bean, corn, etc)
a spiritual PART TWO to last week's meal, they go excellent together
last week i gave a chimichurri, steak, and roasted potato recipe. alongside those pieces, i also made this summery, minnesotan succotash that went with it perfectly. the chimichurri served on top really made everything go together perfectly, but it’s a delicious meal all on it’s own, if that’s more your vibe
serves: 6
ingredients:
2 cups corn
1ib. green beans
1 red pepper, diced
2 shallots, diced
2 cloves garlic, minced
2tbsp. olive oil
1 tsp. smoked paprika
1 zucchini
(any other vegetables you have, or that you think would taste good)
salt & pepper to taste
parsley or cilantro (or both) to taste
instructions:
in a large skillet heat olive oil over medium heat
add shallots and sauté until fragrant and softened (roughly 3-4min)
add garlic and red pepper, cook until fragrant and softened (roughly 2-3min)
stir in corn, green beans, zucchini, any other vegetables you want to add, paprika, salt, pepper and cook until vegetables are softened but still have a bit of a crisp body
parsley and/or cilantro as a garlic
serve & enjoy!
